Khao-phat
( Fried Rice)

Another easy dish, I compare it to a college pasta food. This is the poor man meal, consisting of leftovers to make a new meal. I use to make tons of this in college feeding a dozen or so people really cheaply, then we would watch "Star Trek." Feel free to substitute meat, shrimp or tofu instead of chicken. Make what you have, and remember to invite some of your pooooooooor unemployed friends over. Remember what goes around comes around.

Heat oil in the wok or pan, add the chicken and garlic, and stir lightly over the heat for 1 minute. Add the onions and saute for 1 minute or until golden brown, break in the eggs, mix very well, and then stir in the rice and the rest of the ingredients. Keep a consistent stir. Work those muscles. TASTE OFTEN. (Remember you have the outstanding ability, the force is with you.) Cook for 2 minutes over medium heat and serve immediately decorating with cucumber slices and whole spring onions. Be creative here, decorate with anything you want.

Possible Proportions Possible Yummy ingredients OR grocery list:::
7 oz / 200 g boneless skinned chicken breasts, cut lengthways into 1/2 in /1 cm thick slices
1 medium size onion (like red onion for color), sliced
1 1/2 tablespoons chopped garlic
4 cups/ 1 3/4 lb /750 g cooked rice (prefer Elephant Brand Jasmine Thai rice)
2 eggs
1 spring onion (scallion), chopped
1 tomato, cut into many wedges
1/2 teaspoon pepper corn
2 teaspoons white soya sauce
1 teaspoons fish sauce
1 1/2 teaspoons sugar
1 teaspoon ground white pepper

Enjoy and remember this is a meal to feed many poor souls very cheaply. Don't forget to invite your unemployed friends over.
